Easy Cheese

Turns out that making cheese is easier than writing a blog. I’m not talking about fancy-pants cheese, I’m talking about basic cheese curds. Making fancy cheese is considerably more difficult than blogging. Unless you’re like me and decided to abandon your blog for a month to adventure in Costa Rica and then generally distract yourself upon return. Oh well. I’m back, friends. Be happy. Make cheese.

All you need is 2 parts whole milk to one part buttermilk.
You’ll also need a non-reactive pot, colander, salt, and cheesecloth.
That’s it.

Slowly bring milk to a boil.
Stir in room temperature buttermilk.
Remove from heat, and let rest 5 minutes for curds to separate from whey.
While you’re waiting, line a colander with cheesecloth.
Pour the separated curds and whey through the lined colander.
Let the curds cool for 5 minutes, and then pull the cheesecloth into a ball.
Hang cheesecloth, and allow whey to drain for 20-30 minutes.

At this point, you’ll have cheese. For real. It’s as easy as that.
You should stir in a pinch or two of salt to help flavor development.
If you want a creamier cheese, put a pan under the cheese as it’s draining. Stir in some of the whey that you have collected.
If you want a cheese that’s more firm, place a weight on top of the cheese after hanging to press out more whey and compress the curds.

Fresh cheese is meant to be eaten…fresh. So enjoy within 48 hours.
